The Pinot Noir Reserve "Praepositus" from the ancient winery Abbazia di Novacella in Alto Adige is a red wine that surprises with its elegance and sinuosity. The grapes of the homonymous variety are vinified in purity and matured for 24 months in French barriques and tonneaux. Only after a 12-month rest in the bottle are they ready to be tasted. The ruby red colour tinged with pink introduces a rich and intense olfactory picture with scents of underbrush and sweet spices. The taste is sumptuous, decisive and envelops the palate in a silky mantle

Pinot Noir Riserva "Praepositus" is a label that is part of Abbazia di Novacella's range of high-profile wines. It is made only from the grapes of selected and particularly well-suited plots, which represent the jewel in the crown of the estate. Vineyards that, due to their altitude, soils and climate, manage to express the best varietal characteristics of the noble Burgundian grape variety, combined with the typical fresh and mineral connotations that characterize mountain wines as a true stylistic signature. It is an extraordinarily elegant red, which goes very well with roast white meats or a roast lamb with herbs.

Pinot Noir "Praepositus" Riserva from Novacella Abbey is one of the most interesting wines because of its distinct territorial character. The grapes come from the estate of Cornaiano of the Novacella Abbey. The area of Eppan is among the most vocated in the region for the cultivation of the Burgundy grape variety. The vineyards are located at an elevation of 380 meters above sea level with a north-facing exposure. The climate is cool, sunny and breezy, and the soils are composed of moraine deposits of ancient glacial origin, resting on porphyry rocks. Management with low yields, allows grapes with concentrated aromas to be brought to harvest. The best clusters are sent to fermentation in stainless steel vats, with 10 percent of the grapes not destemmed, at a controlled temperature of 28 °C and a maceration period on the skins of about two weeks. The wine matures in French oak barriques and tonneaux, one-third new, for 24 months. Before release for sale, the wine is aged for 12 months in bottle.

The "Praepositus" Pinot Noir Riserva from Abbazia di Novacella is the territory's classic red, the one that best interprets the personality of this wonderful Alpine terroir. In the goblet it reveals a luminous light ruby red color, almost transparent. The olfactory profile is characterized by particularly delicate and elegant aromas, reminiscent of red ribes, raspberry, wild strawberries, morello cherry, shadowy hints of underbrush and mountain wild flora, nuances of soft spices, cinnamon and cloves. The palate is smooth and harmonious, with fine tannins very well integrated with ripe, fragrant fruit. The sip is agile, long and with a rich aromatic facet, flowing into a fresh, mineral finish.
