"Girofle" is a rosé wine from Puglia made from pure Negroamaro. The elegant and intense aromas of pomegranate, pink pepper, cloves, and pink grapefruit invite a tasting of great freshness and lightness, seasoned with a discreet saltiness and an intense and pleasant mineral note

The Rosato ‘Girofle’ by Severino Garofano is a Salento wine that embodies the attributes of Apulian rosés: dynamism, liveliness, and fragrance. The French expression “clou de girofle” means “clove”, from which the name of this label derives, a tribute to the producer who has helped elevate Negroamaro. The ‘Girofle’ preserves in a bottle all the qualities and potential of Negroamaro in rosé, capable of delighting with its Mediterranean spirit and its longevity. The Severino Garofano winery is located in Copertino, just a few kilometers from Lecce, within the Masseria Li Monaci, named after some Byzantine monks who settled here around the year 1000, dedicating themselves to the cultivation of various plant species, with vines and olives being the most prominent.

Severino Garofano Rosato ‘Girofle’ is a pure Negroamaro vinified in rosé through a short maceration on the skins. The alcoholic fermentation takes place in cement tanks, and the wine matures for a few months in steel before bottling and market release, which occurs in the spring following the harvest.

Visually, the ‘Girofle’ Severino Garofano Negroamaro Rosato reveals a bright coral pink color with cerasuolo tones. The aromatic spectrum opens up with scents of red fruits such as wild strawberries and raspberries, soon joined by hints of flowers, pink pepper, and pomegranate. On the palate, it is light, fresh, and crisp, with a lovely freshness that accompanies the pronounced mineral vein. An ideal rosé from Salento to pair with platters of not overly aged cheeses and cured meats, or with the traditional Apulian “street food”, such as panzerotto or puccia.
