The Classic Method Nature Blanc de Blancs ‘479 - Ovest’ by Nicola Gatta is made from pure Chardonnay grapes from the Campiani vineyard, facing west on the hills of Gussago. The number ‘479’ refers to the identity of the plot from which this wine originates, expressing Nicola Gatta's desire to tell the different nuances of the territory through individual plots. The winemaking without dosage enhances the purity of the grape while spontaneous fermentation and the long aging of 50 months on the lees contribute to building depth and complexity while maintaining great freshness. On the nose, it opens with notes of ripe citrus, white flowers, toasted almond, and delicate mineral nuances. On the palate, it shows a tense and vertical texture, with a pleasant saltiness, an elegant structure, and a fine perlage that accompanies a persistent sip. It pairs well with fish dishes and seafood preparations, particularly with a red shrimp carpaccio
